In the bowl of your stand mixer add the water, yeast, and honey. Stir gently to dissolve the yeast and honey. Let this mixture sit until the yeast is active and bubbly. It usually takes about 15 minutes.
After the yeast is activated add the oil, salt, and three cups of the flour. (Make sure you're using your dough hook for the mixer)
Turn the mixer on the lowest speed to gradually incorporate the ingredients. Turn off mixer, and add more flour in half cup increments until the dough pulls away from the sides of the bowl and sticks to the beater. I usually need about 6 - 7 cups of flour.
Remove the dough hook, and bowl from the stand mixer. Place the bowl in a warm area of your kitchen, and cover with a dish towel. Allow to rest for about 30 minutes.
After 30 minutes separate the dough into two loaves, and place into prepared loaf pans. Cover the loaves with the dish towel, and allow to rise an additional 20-30 minutes
Bake at 350 degrees F for about 20 minutes, or until golden brown
