Low Carb Taco Casserole

An easy, cheesy taco bake made with ground beef and baked in a cast iron skillet for a family-friendly, low carb dinner.

Ingredients

  • 2 lbs ground beef
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced (optional)
  • 1 packet taco seasoning or homemade mix
  • 1 10 oz can diced tomatoes with green chilies, drained
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • 2 cups shredded cheese
  • Green onions + cilantro for garnish

Instructions

  • Preheat oven to 350°F.
  • In a 10–12" cast iron skillet, brown beef and onion. Add garlic and bell pepper; cook until soft. Drain grease.
  • Stir in taco seasoning and diced tomatoes. Simmer 5 minutes.
  • Spread cream cheese and sour cream mixture over the beef.
  • Top with shredded cheese.
  • Bake 20–25 minutes until cheese is melted and bubbly.
  • Garnish with green onions and cilantro before serving.
