Sausage Kale Potato Soup

Ingredients

  • 1 pound of ground Italian Sausage
  • 1 onion chopped
  • 2 large potatoes cubed
  • 3 cloves of garlic minced
  • 1 bunch of kale chopped
  • 2 tsp salt
  • 2 TB flour
  • 4 cups chicken broth
  • 3 cups milk
  • 2 cups heavy cream

Instructions

  • In a large pot cook the sausage over medium high heat.
  • Add chopped onion, and crumble together with sausage
  • Add salt, and continue sautéing about 7-10 minutes or until sausage is thoroughly cooked.
  • Add garlic, and sauté for a minutes or so until the garlic is fragrant.
  • Drain grease from the sausage, and return to pot on medium high heat and stir in flour.
  • Once the flour is incorporated, slowly add the chicken broth while stirring constantly. Go slow to prevent clumping.
  • Slowly add milk while stirring continually.
  • Add chopped potatoes , and turn the heat down to medium. Bring to a low boil.
  • Once the soup is simmering, continue cooking for about 20 minutes, or until the potatoes are tender.
  • When potatoes are tender, add the kale.
  • Add two cups of cream and stir very gently. Turn the heat to low and let cook for another 15 minutes, until the kale has wilted.
