Simple Breakfast Hash

Ingredients

  • 4 or 5 potatoes cubed
  • 1 small onion diced
  • 1 medium bell pepper diced
  • 2 cups ham cubed
  • 6 eggs
  • salt and pepper to taste

Instructions

  • Heat a 10" oven-safe skillet over medium heat. Add potatoes and cook for about 8 minutes. Add onion, and bell pepper and cook for an additional 10 minutes, or until potatoes are tender.
  • Stir in the ham, and add salt and pepper if desired.
  • Make small wells in the top of the hash, and carefully crack the eggs into the wells.
  • Cover, and allow to cook over medium heat for about 3 to 4 minutes. Just until the egg whites start to set
  • Transfer the skillet to the oven, and broil on high until the yolks are set how you like them. Usually 3 to 4 minutes is just right for us.
