Heat a 10" oven-safe skillet over medium heat. Add potatoes and cook for about 8 minutes. Add onion, and bell pepper and cook for an additional 10 minutes, or until potatoes are tender.
Stir in the ham, and add salt and pepper if desired.
Make small wells in the top of the hash, and carefully crack the eggs into the wells.
Cover, and allow to cook over medium heat for about 3 to 4 minutes. Just until the egg whites start to set
Transfer the skillet to the oven, and broil on high until the yolks are set how you like them. Usually 3 to 4 minutes is just right for us.
