Our farmhouse kitchen has been an ongoing project for more than a year now, and I’ve been slowly working toward a space that makes everyday cooking from scratch easier. Most recently I painted the cabinets and replaced the hardware, and I’m excited to keep improving the space as time allows.

When you cook most of your food at home, meal planning starts to look a little different than it does for the average kitchen.

Instead of planning meals around packaged foods or quick recipes, you begin planning around basic ingredients, what you already have in the pantry, and what needs to be used up first.

When I first started cooking from scratch years ago, I thought I needed a perfect meal plan every week. I tried writing out detailed menus and buying ingredients for every single meal ahead of time.

It didn’t take long to realize that kind of planning made my kitchen feel more stressful, not less.

Over time, I found that meal planning for from scratch cooking works best when it stays simple and flexible.

Now my goal isn’t to have a perfect plan.

My goal is just to keep the kitchen running smoothly.

I Keep the Pantry Stocked With Basics

One of the biggest things that makes meal planning easier is having the same basic ingredients on hand all the time.

When the pantry stays stocked with staples, I don’t have to plan every meal from scratch each week. I can make simple meals with what I already have.

Some of the things I try to keep on hand are:

flour
oats
beans
rice or grains
sugar or natural sweeteners
oil or cooking fats
basic baking ingredients

Having these foods available means I can always make something, even if I didn’t plan the week perfectly.

This is one of the reasons cooking from scratch gets easier over time. The more your pantry stays stocked, the less complicated meal planning feels.


I Think One Day Ahead, Not One Week Ahead

Another thing that helped my kitchen feel less overwhelming was learning to think one day ahead instead of trying to plan everything for the whole week.

There were times when I tried planning a full week of meals, and even a whole month at a time. But as soon as life didn’t go according to the plan, I would fall behind and feel like I had failed. Eventually I would give up on the plan completely and end up right back where I started. After doing that more times than I can count, I realized that my kitchen works much better when I keep my planning simple and only stay a day or two ahead.

Now each evening, I try to ask myself one simple question:

What will we eat tomorrow?

That might mean:

taking meat out to thaw
mixing dough for bread
soaking beans
starting broth
checking what needs used up

Just doing that one small thing makes the next day go much more smoothly.

I’ve learned over the years that my kitchen runs best when I stay one step ahead, not ten steps ahead.

Simple Meals Make Everything Easier

One mistake I made when I first started cooking this way was thinking every meal needed to be special.

But the kitchens that run the smoothest usually rely on very simple food.

Soup and bread.
Eggs and toast.
Beans and rice.
Roasted meat and vegetables.
Pancakes or biscuits.

After cooking from scratch for many years, I’ve learned that repeating simple meals makes life much easier.

Not every supper needs to be new.

Not every recipe needs to be exciting.

When meals stay simple, meal planning for from scratch cooking becomes much more manageable.

I Use Cookbooks Instead of Endless Recipes Online

Over the years, I’ve found that my kitchen runs much more smoothly when I stick to a small collection of recipes I already know work.

Most of the time, I use the same cookbooks, my own handwritten recipes, or meals I’ve made for years. I don’t need something new every day. I just need food that is simple, filling, and easy to prepare.

In many ways, this is how kitchens used to work. Women cooked from the same recipes over and over, and because of that, meal planning felt much easier.

Limiting my choices has actually made cooking from scratch feel less stressful and more natural.

I Keep a Kitchen Rhythm Instead of a Strict Plan

One of the biggest changes in my kitchen happened when I stopped trying to follow a strict schedule and started paying attention to the natural rhythm of the day.

Something thawing.
Something rising.
Something simmering.
Something baking.

When those small things keep moving, meals come together without feeling rushed.

In our home, I don’t always know exactly what we’ll eat three days from now, but I usually know what we’re eating tonight and what we’ll probably eat tomorrow.

That is enough to keep the kitchen running.

And honestly, that’s how most old-fashioned kitchens worked.

From Scratch Cooking Doesn’t Have to Be Complicated

If meal planning feels overwhelming right now, the answer usually isn’t to make a more detailed plan.

It’s to make a simpler one.

Keep basic ingredients on hand.
Think one day ahead.
Cook simple meals.
Let your kitchen develop a steady rhythm.

After many years of running a home this way, I can honestly say that the more simple my kitchen becomes, the easier it is to keep it going.
