It always sneaks up on me. One day the zucchini plants are blooming, and the next, they’re producing like crazy! After just a couple of days of not checking, I walked outside and came back in with an armload of squash the size of my forearm (I’m not exaggerating…just look at that photo above!).

You can’t beat the simplicity of zucchini cooked in butter or olive oil with a little garlic, salt, and fresh herbs like basil or thyme. It’s one of my go-to side dishes when dinner needs to come together quickly.

A timeless way to use up shredded zucchini, and a great way to sneak veggies into something sweet! My favorite version uses maple syrup instead of sugar and a bit of cinnamon for that cozy flavor.

This is my go-to when I accidentally grow zucchini the size of baseball bats (which seems to happen more than I’d like to admit 😅).
Cut them in half lengthwise, scoop out the seeds, and fill with whatever you like:
